Egg ‘Cupcakes’

Egg ‘Cupcake’ Recipe
4 eggs
1 Cup Egg Whites
3oz Red Pepper
2oz Broccoli
1oz Baby Spinach
2.5oz Asparagus
3 Scallions (Green Onions)

Optional spices: Salt, pepper, red pepper, Garlic, Parsley or Cilantro

Finely chop all vegetables and place them in a big bowl. Add eggs and egg whites. Add any spices, you desire. Some people have added Feta or Goat Cheese as well.

With a ladle type of spoon, spoon the egg and veggie mixture into pre-greased cupcake pan. Make sure to fill only 2/3 or 3/4 of the way, for they do ‘rise’ while cooking.
Cook at 350 degrees for 20-30 minutes.
Makes 12 “cupcakes”. Delicious way to start the day!
